HOW TO START SMALL SCALE PRODUCTION OF NATURAL FRUIT JUICE - MANGO FRUIT


For this purpose, we shall use MANGO FRUIT as an example. About 80% of Mango fruits in Nigeria are wasted due to the apparent absence of storage facilities and alternative use. This makes the juice production a most desirable venture to go into. Mango is very rich in vitamins.

SPACE REQUIREMENT
The space required for the project is 15m x 20m. This will house the machinery and equipment. Additional space will be required for raw material and product storage

RAW MATERIAL
1.       Ripe Mango Fruits
2.       Treated Water
3.       Honey
4.       Preservative (Sodium Benzoate)
5.       Colourant (Water based food grade colourant)

PROCEDURE
1.       Wash 100 ripe Mango fruits
2.       Boil the fruits
3.       Allow to cool
4.       Peel off the outer skin (epicarp)
5.       Squeeze the juice out from the fruits (You can use hand or presser)
6.       Place the fruits on top of the seive
7.       Pour 2 litres of warm water on the extracted fruit juice
8.       Add 10cl of honey
9.       Add 0.1% (About one teaspoon full) of Sodium Benzoate
10.     Mix and package
11.     Ensure you pack in airtight and water tight containers.
